     CHINESE PEPPER STEAK

Ingredients
1 1/4 LBS. TOP ROUND STEAK, CUT 3/4 TO 1 INCH THICK
1 T. CORNSTARCH
1/2 t. SUGAR
1/4 t. GINGER
1/4 C. SOY SAUCE
3 MED. GREEN PEPPERS
1 C. CHERRY TOMATOES
2 T. VEGETABLE OIL
1/4 C. WATER
 
1 CLOVE GARLIC, MINCED
RICE, COOKED

Instructions
PARITALLY FREEZE STEAK (ABOUT 15 MIN.) TO FIRM; SLICE DIAGONALLY ACROSS THE GRAIN INTO VERY THIN STRIPS. COMBIN CORNSTARCH, SUGAR AND GINGER; STIR IN SOY SAUCE. POUR MIXTURE OVER MEAT AND STIR. CUT GREEN PEPPERS INTO THIN STRIPS. HALVE CHERRY TOMATOES. HEAT OIL IN WOK OR SKILLET. QUICKLY BROWN BEEF STRIPS (1/3 AT A TIME) IN HOT OIL; REMOVE FROM PAN. REDUCE HEAT; ADD GREEN PEPPER, WATER AND GARLIC. COOK UNTIL GREEN PEPPER IS TENDER-CRISP, ABOUT 5 TO 6 MINUTES. STIR IN MEAT AND TOMATOES; HEAT THROUGH. SERVE OVER COOKED RICE.
