     Whole Wheat Bread

2 T saf-instant yeast
8 T raw honey or molasses
4 C lukewarm water
4 T olive oil
3 T sea salt
8 C whole wheat flour
4 T gluten or 2 C sifted white flour

Add altogether honey or molasses, warm water, oil, salt and add flour gradually, enough flour to make dough that can be handled. Knead thoroughly. Keep dough soft with a little water. Cover and let rise two hours in warm oven about 80 degrees. When dough doubled in size, mold into pans well greased. Let rise in pans until about double in size, about 1 hour. Bake 35 minutes at 350 degrees.
