Boil turkey inners and neck, simmering until a nice broth is made. You may have to add additional water. After broth is made, chop inners and add to stuffing, discarding neck.
Put bread cubes into a large pot or dutchoven. Cook onion and celery in butter until tender. Put this mixture into break cubes. Mix the seasonings together, then add them to the bread.
Add egg and broth to bread. Mix well. If additional moisture is needed, add some chicken broth. Stuff the turkey or chicken, or bake covered at 350 deg. for about an hour.
(I doubled this recipe for Thanksgiving.)
