     Sweet Potato Casserole

Ingredients
4 medium sized sweet potatoes
1 cup sugar
1 cup milk
2 eggs
1 tsp vanilla
1 tsp salt
1 cup brown sugar
1 cup pecans, chopped
1/2 cup flour
 
3/4 stick butter, softened

Instructions
Bake sweet potatoes at 400F for 1 hour or until soft. Peel sweet potatoes and mash. Add white sugar, milk, eggs, vanilla, and salt. Spread in 9x13 pan. In small bowl, mix together brown sugar, pecans, flour, and butter. Sprinkle topping mixture over potato mixture. Bake at 400F for 30 minutes.
This dish can be prepared ahead of time and refrigerated. Make potato and topping mixture as directed above, but leave topping in separate bowl. Refrigerate. Take dish out about 30 minutes before baking to bring to room temp and sprinkle on topping. Bake as directed.
