In a medium bowl, whisk together the eggs, sugar, salt, flour, and
vanilla until well blended. Stir in the coconut.
Using a 1 tablespoon cookie scoop drop the dough into mounds,
spacing them 2 inches apart. Bake for 14 to 16 minutes., until
they are golden brown around the edges and a few strands of
coconut on the tops of the cookies start to turn golden. Cool the
cookies completely on the baking sheet.
