Chop shallot and garlic in food processor. add the oil and pulse.
put mixture in bowl and add all seasonings. mix well.

rinse the roast and pat it dry. place it in a roasting pan. rub the
meat all over with the herb paste and place in fridge to chill for 2-3
hours.

|
preheat oven to 400. bake uncovered for 30 minutes. lower heat to
350. bake for 1-1/2 hours.
|
|
|
let meat stand for 15-20 minutes before slicing.
