     Cherry Pie Crumble Bars

Crust & Crumble
3 1/2 cups unbleached flour
1 1/4 cups sugar
1 1/2 tsp baking powder
3/4 to 1 tsp kosher salt
1 1/4 cups butter, chilled and cut into bits
2 large egg yolks, lightly beaten
2 tsps vanilla
4 cups cherry pie filling

Preheat oven 375. Line 9x13 pan with parchment paper letting hang over edge by inch or two. This will make it easier to lift out and cut bars later.
Prepare crust and crumble. Place flour, sugar, baking powder and salt in food processor. Turn on and begin to add butter a little at a time until turns into a course crumble. Whisk extracts and eggs in a bowl. With a fork, gently toss into flour mixture, do not over-work dough.
Remove 2 cups crumb mixture and set aside for topping. Press remaining dough into prepared pan. Spoon cherry pie filling into pan on top of dough and spread evenly. Sprinkle with reserved crumb topping.
Bake for 55 minutes. To prevent browning cover with aluminum foil last 20 minutes. Remove foil, transfer to wire rack. Cool and cut into squares.
