     Chinese Chicken Lo-Mein

Ingredients
16 oz whole wheat spaghetti
1 head broccoli, cut into florets
1 sm bunch bok choy, coarsely chopped
1 lb boneless, skinless chicken breasts, cut into thin strips
1/4 c stir-fry sauce
1 tsp sesame oil
1 tsp minced ginger
Pinch of ground black pepper
 

Instructions
1. PREPARE the spaghetti according to package directions. 2. MEANWHILE, heat a large wok or nonstick skillet coated with cooking spray over medium- high heat. Add the broccoli and bok choy and cook, stirring, constantly, for 4 minutes, or until tender crisp. Remove to a bowl. 3. ADD the chicken to the pan and cook, stirring constantly, for 4 minutes, or until no longer pink. Add the vegetables and spaghetti. 4. IN a cup, combine the stir fry sauce, oil, ginger, and pepper. Stir into the pan and cook, stirring constantly, for 2 minutes, or until heated through.
