Ingredients
2 lbs all purpose potatoes, peeled
1 med sweet onion, trimmed
2 T fresh lemon juice (1/2 a lemon)
2 cloves garlic, minced
1/3 cup flour
2 eggs, lightly beaten
1 t salt
1/2 t pepper
1/2 c vegetable oil
 
sour cream and applesauce, for serving

Instructions
Coarsely shred potatoes and onion on a box grater or a food processor. Combine in a colander or strainer and press out as much liquid as possible. Transfer to a large bowl and toss with lemon juice. stir in garlic.
Add flour, eggs, salt and pepper. Stir to combine. Heat 14 cup oil in a skillet.
Scoop 1/3 c of potato mixture into hot oil and press to flatten to 1/2 inch thick Repeat, but do not crowd pan. Cook 2-3 minutes per side, util browned. Transfer to paper towel-lined baking sheet and keep warm in 200 degree oven. Repeat with all the potato mixture, adding remaining 1/4 cup oil halfway through.
Serving Suggestions
Serve with sour cream an applesauce.
