Dice the pepper and fry in tiny amonut of sunflower oil. If I'm cooking for one I usually use half a bell pepper. Add the beef and fry until thoroughly browned.

Add about half a cup of water, a good squeeze of tomato paste, and a teaspoon of yeast extract. Boil for 20 minutes. you may have to add a touch more water

|
Chop the potato and boil in plain water. Do the same to the spinach. Mash the potato and mix in the spinach.

|
Place beef/pepper mixture in a dish. Top with spinach/potato mash. Top with sliced tomatoes and bake for about 20 minutes.
