Place 4-6 quarts of water to boiling. While the
water heats, Heat oil and butter in a seperate
skillet and saute pancetta until golden. Remove with
slotted spoon and drain on paper towels.
Heat 4-6 quarts of water to boiling and salt the
water generously. Cook pasta until just firm to the
bite (al dente) and drain. Should take about 10
minutes.
In a large serving bowl, stir beaten eggs, 1/4 cup
of cheese and bacon together. Add the pasta and
toss to coat. spring pancetta and remaining cheese
on top and serve.

NOTE- you can replace pancetta with bacon (6 slices).
