Mix apples and eggs together. Add sugar and oil. Sift dry ingredients and add to apple mixture. Add vanilla and nuts. Bake in 9 x 12 ungreased pan at 350 degrees for 45 minutes.
Frosting-
Melt butter or margarine. Mix flour and sugar together well before adding to melted butter. Add milk and vanilla. Cook on medium heat until thick. Cool. Add nuts if desired. Spread on cake. (I usually use a bundt cake pan for this. Also, the frosting does not get real thick, so I drizzle part of it over the top of the cake, and use the remainder as a sauce for the cake).
