Ingredients
Sour cream pastry...recipe at bottom
2 tbl onion powder
1/4 lb proscuitto
1 minced garlic clove
2 pkg chopped drained spinach
salt and pepper
1 lb ricotta
1 jar whole pimentos
6 hard cooked egg yolks , smashed
 
1 tbl heavy cream

Instructions
Line bottom and sides of a 9' spring form pan with 2/3 of the pastry. Layer wiith 1/2 of the proscuitto,. Combine spinach w/ parsley, onion, garlic, salt and pepper. Spread over proscuitto. cover with layer of Ricotta.
Slit open pimentos and lay flat on top of ricotta. Spread egg yolks over. Top with proscuitto. Roll remaining pastry and place on top of proscuitto. Pinch edges. Prick top of crust and brush with heavy cream ...Bake at 425 Reduce heat to 375 and bake 30 minutes. Cool slihtly
Sour cream recipe- Cut 2 tbl shortening and 8 tbl softened butter into 2 C flour. Beat 1 egg with 4 tbl sour cream and 1/4 tsp salt. Add to flour. Quickly stir into flour and form into a ball. Chill at least 30 minutes
