     Chicken Cordon Bleu

Ingredients
2 whole chicken breasts (about 1 1/2 pounds)
4 thin slices fully cooked smoked ham
4 thin slices Swiss cheese
1/4 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper
1 egg, slightly beaten
1/2 cup dry bread crumbs
3 tablespoons vegetable oil
 
2 tablespoons water

Instructions
Remove skin and bones from chicken breasts. Cut chicken breasts in half to make 2 thin pieces. Flatten each half to 1/4 inch thickness between plastic wrap or waxed paper. Place 1 slice ham and 1 slice cheese on each chicken breast. Roll up carefully, beginning at narrow end. Scure with wooden picks. Mix flour, salt and pepper. Coat rolls with flour mixture. Dip rolls into egg and roll in bread crumbs.
Heat oil in 10-inch skillet over medium heat. Cook rolls in oil 5 to 10 minutes, turning occasionally, until light brown. Add water. Covre and simmer about 10 minutes or until juices run clear. Remove wooden picks.
