     Lemon Herb Roasted Chicken

Ingredients
One 4 pound Chicken
3 T salt
4T butter room temp
1 tsp pepper
2 T fresh rosemary leaves chopped
4 cloves garlic minced
1 lemon zested and then will juice
8 potatoes halved
 

Instructions
Racks in center of oven and temp set to 475. Wash and dry bird. rub w salt inside and out. In small bowl combine butter pepper garlic rosemary and lemon zest.Rub all over bird and under skin. Tie legs together.
Place potatoes cut side down in a large shallow roasting pan.Perch chicken on top of potatoes. Roast for 30 min. Remove to baste and squeeze 1/2 a lemon over bird. Reduce temp to 375. Roast for 60 min or until juices in thigh run clear when pricked. If bird begins to burn on top cover lightly with foil.
Squeeze other half of lemon over top then tent for 5 min before serving.
