Cookie Crust- Mix sugar, coconut oil, and flour together and press firmly onto a 12” pizza pan. Bake in a preheated 400 F. oven for 10-15 minutes.
Beat cheese, sugar, and vanilla on low speed until smooth. Beat in cream on low speed till well blended. Beat on medium speed until stiff peaks form. Spread over cooled crust.
Fruit Decoration- Arrange fruit pieces symmetrically over the top of the filling. Heat apple jelly over low heat until melted and brush over fruit. Refrigerate at least 2 hours.
This fruit pizza can be made with any fruit desired depending on the season.
