     Gumbo

Ingredients
1/2 cup oil
3/4 cup flour
1 cup onion
1/2 cup celery
1/2 bell pepper
2 cups okra
2 tbs garlic
1-2 lb shrimp or chicken
2 tsp salt
 
1 1/2 tsp black pepper
2 tsp creole seasoning
1 1/2 tsp dried basil
1 tsp thyme
1 cup tomatoes, canned or fresh
2 quarts chicken or shrimp stock
1 tbs hot sauce
1/4 tsp cayenne pepper
1/2 - 1 lb andouille sausage, cooked

Instructions
In a large skillet, combine oil and flour. Stir on low-medium heat until roux is chocolate colored (takes a long time, at least 15 minutes). Or buy jarred roux and warm it up. Add vegetables, garlic, meats, and spices. Stir for 5 minutes. Add tomatoes and broth. Cook for 10 minutes. Add hot sauce and cayenne pepper.
