     Roasted Vegetable Burritos

Ingredients
1 1/2 cups dry brown rice
1/2 tbsp chili powder
1 zucchini
1 onion
1 red bell pepper
1/2 tsp cumin
1/2 tsp oregano
2 cans black beans
2 1/2 cups chedder cheese
 

Instructions
Preheat oven to 400. Chop vegetables into bite sized pieces. Toss with 2 tbsp olive oil, 1/2 tsp cumin, 1/2 tsp oregano. Roast for 40 minutes.
Combine rice in a pot with chili powder. Add 3 cups water and bring to a boil. Simmer for 20 minutes.
Assemble burritos and crisp in a skillet.
