Coat turkey with brine.
Mix all ingredients in a bowl. Add water and mix
to a paste.
Rub it on the turkey inside and out.
Put turkey on roasting rack in pan and refrigerate
20 minutes. Then cover with plastic wrap and
refrigerate 16 to 20 hours
Make gravy, put everything in pot and bring to
boil, cover and simmer 2 to 2 and a half hours.
Add drippings from turkey and cook more. Puree
and strain.
