     Spouted Grain Bread

Ingredients
16 oz by weight (4 c) sprouted whole wheat flour
1 tsp salt
1 1/2 c body temp water
1 1/2 tsp instant yeast
 

Instructions
Mix and knead together till well mixed. Will be wetter than regular bread dough. Transfer to a bowl and press a pc of plastic wrap onto surface. Cover bowl with a damp towel. Let rest 1 1/2 hrs. Dough will hold indentations.
Shape into loaf in a non-stick pan 8 1/2 x 4 1/2. Cover with plastic wrap and let bread rise for 1 hr or until it rises above the top of the pan.
Bake at 375 for 35-40 min. Instant read thermometer will read 190. Turn bread out of pan and cool completely before slicing
You will need 1-2T less water in the summer.
