2 Tbsp olive oil
|

4 cloves garlic
|

1 medium onion
|
|
1/2 lb. carrots
|
|
4 stalks celery
|
|
1 lb. dry navy beans
|
|
1 whole bay leaf
|
|
1 tsp dried rosemary
|
|
1/2 tsp dried thyme
|
|
|
|
1/2 tsp smoked paprika
|
|
15-20 cranks fresh cracked pepper
|
|
1 1/2 tsp salt
|

Instructions |
|
|
1. Mince garlic, dice onion, slice celery, slice carrots into thin rounds. Add olive oil, garlic onion, celery, carrots to large slow cooker.

2. Rinse beans add to slow cooker. Add Bay leaf, rosemary, thyme, paprika and cracked pepper.
|
|
|
3. Add 6-8 cups water, stir. Cook for 8 hours on low.
|
|
|
4. Stir soup, mash beans slightly, add salt as needed.
|

Suggestions |
|
Use slow cooker liner to avoid mess. Can also add veggie broth in place of water.
