     Scotch Eggs

Ingredients
2 lb bulk sausage
1 cup pork rinds, crushed to a powder
1 cup shredded cheddar
2 tsp garlic powder
1/4 cup chopped jalapeno (optional)
12 hard boiled eggs
 

Instructions
Mix all ingredients together (except eggs) until thoroughly blended (it is best to use your hands).
Divide the meat mixture into twelfths and pat out one piece in your hand and mold it around on the eggs.
Repeat with remaining eggs.
Place them all on a baking sheet or in a baking pan and bake at 350 F for 30 minutes.
