     Quinoa Mexican Salad

Ingredients
1 c quinoa well rinsed
1 1/2 c black beans rinsed (I used 1 can)
1 1/2 c frozen corn
1 1/2 c cherry tomatoes quartered
1 red bell pepper diced
5 green onions diced
1/2 c chopped cilantro (optional)
avocado for garnish
Dressing
 
1/4 c EVO
1 tsp cummin
1-3 cloves garlic minced
juice from 1 lime ( I used lemon)
1/4 to 1/2 tsp salt

Instructions
Rinse quinoa. Add to pot with 2 cups of water bring to a boil and reduce to low. Reduce to low and simmer for 17 min. Cool and mix everything together. Keeps well and can be served room temp.
