Preheat oven to 200 degrees. Grease a small casserole dish.
Layer half of the potatoes in the bottom of dish. Top with onion
slices. Add the remaining potatoes.
In a saucepan, melt butter over medium heat. Add flour off the
heat and add, nutmeg, veggie stick and salt. Stir constantly
with a whisk for 1 minute. Return to heat, stir in milk and cook
until mixture thickens. Stir in cheese until melted.
Pour cheese sauce over potatoes and cover dish for 1 1/2
hours,
