     Pasta - Peanut Noodles

8 oz. spaghetti
2 T. sesame oil (dark)
1 bunch green onions, sliced (white parts only)
1 t. minced fresh ginger
1/3 c. creamy peanut butter
1/4 soy sauce
1/4 c. hot water
1 T. cider vinegar
1 t. sugar
1/4 t. crushed red pepper flakes

Cook spaghetti in a large pot of boiling water until al dente. Drain.
Meanwhile, in a small skillet, heat oil over low heat, then cook onions, stirring until tender. Add ginger; cook, stirring, for 1 to 2 minutes. Increase heat to medium-low; mix in peanut butter, soy sauce, water, vinegar, sugar, and pepper. Remove from heat.
Toss spaghetti with sauce.
