     Sultana Cake

Ingredients
500g sultanas/any type of mixed/dried fruit
225g butter
3 eggs
350g sugar
350g flour
1 tsp baking powder
1 tsp vanilla essence
1 tsp almond essence (used lemon instead)
 

Instructions
Cover fruit with water. Simmer for 15 minutes. Strain, add butter, stir until melted and cool.
Beat eggs and sugar together until light. Add to the cooled fruit and butter. Add dry ingredients.
Turn into 20cm lined tin and bake at 160C for 1.5-2hours.
