1/2 c. kosher or 1/4 c. table salt

1/2 c. sugar
|
|
slivers of ginger root
|
|
orange peel
|

lemon peel
|

1 qt. cold water
|
|
SAUCE-
|
|
|
|
apricot jelly
|
|
seasoned salt
|
|
orange juice
|

|
|
|
|
|
|
|
|

|

Instructions |

|
After brining hens for several hours, pat them dry.
|
|

Broil 12-15 minutes per side, beginning with bone side up. Lightly brush with melted butter several times, especially to side.

Toward the end, brush with sauce.
