     Baked New Potatoes

Ingredients
3 pounds small red new potatoes
1/2 cup butter
3/4 tsp salt
1/3 cup olive oil
3 garlic cloves
4 shallots, peeled
1/2 cup chopped fresh parsley
1/8 tsp pepper
 

Instructions
Boil potatoes for 10-15 minutes. Drain and refrigerate.
Melt butter, combine with the rest of the ingredients in a food processor and process until goopy. (This mixture can be made ahead and refrigerated.)
Cut potatoes into fourths and put into baking dish. Pour mixture over potatoes and bake for 2 hours at 325° in an uncovered dish. Stir every 1/2 hour.
Serving Suggestions
Great with beef tenderloin!
