Fry 3 cloves garlic in a little vegetable oil. Add
2 medium size onions finely chopped and sauté for
about 10 minutes. Add 1 tbs. tomato paste and and
cook for a few minutes.
Then add 3 chopped tomatoes, a handful of chopped
basil, some chopped mint and some chopped parsley,
salt and pepper to taste. Add 4 cups of fish
stock, 2 lampuki heads and simmer on low heat for
about 2 hours.
When done remove the fish heads and serve over
some boiled rice.
