     Oat Banana muffins

Ingredients
Topping-
1/4 cup rolled oats
1 Tbs brown sugar
1/4 tsp cinnamon
1/4 tsp nutmeg
1 Tbs melted butter
Muffins-
1 cup flour
1/4 cup brown sugar
 
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp ginger
1/4 tsp salt
1 cup rolled oats
1/2 cup walnuts or pecans chopped
3/4 cup buttermilk
1 egg, 2Tbs melted butter, 3/4 cup mashed banana (~2 small)

Instructions
Preheat oven to 400. Put liners in 12 muffin tins. Stir topping ingredients together and set aside.
Combine first 7 muffin ingredients (flour - salt). Then add oats and nuts. Make a well in the middle of dry ingredients. In a small bowl, whisk together buttermilk, egg, and butter. Then add banana. Add wet to dry and mix just to combine.
Pour batter into muffin cups - about 2/3 full. sprinkle topping over muffins. Bake 20 -25 min- until gently rounded and slightly browned. Cool on wire rack.
