|
note- the original recipe says it's best if you cook the rice the day
before and refrigerate till you fry it but it tastes great either
way- fresh rice or day old rice.

preheat oil in large frying pan.
add onion and peas and fry until tender.
|
|
|
slide the fried ingredients to the side and pour
the beaten eggs on the other side. using a spatula
scramble the eggs. once cooked mix with
vegetables.

|
add the rice to the mix and pour the soy sauce on
top. stir and fry the rice until heated through
and combined. add chopped scallions if desired.
