     Brussel Sprouts salad

Ingredients
1/4 day old baguette (about a 6 to 8 inch piece)
5 TBLS. EVOO, divided
3 garlic cloves
1 small red onion
4 TBLS. lemon juice
16 oz. Brussel sprouts (about a dozen)
1/2 cup flat-leaf parsley, loosely packed
2 oz. shaved Parmesan (optional)
1/4 tsp. salt
 
Ground black pepper

Instructions
Preheat oven to 375 degrees. Slice baguette in half lenghtwise. Drizzle cut sides with 1 TBLS. oil. Season with salt & pepper and bake until golden, about 10 to 12 minutes. Remove from oven and rub immediately with 1 cut clove of garlic. Once cool, tear into bite sized pieces and add to a large mixing bowl.
Peel and halve onion, then slice. Peel and smash the remaing 2 garlic cloves. Heat a saute pan over medium heat. Add 1 TBLS. of oil, then onions and garlic. Season with salt and pepper and cook slowly over low heat until tender., 10 to 12 minutes. Remove pan from heat, remove garlic cloves and add lemon juice and 3 TBLS. of oil to the onion mixture. Let rest in saute pan.
Trim the cut end of sprouts. Slice lenghtwise as thin as possible. Add to large mixing bowls. Pour onion mixture over top and toss well to combine. Finish with parsley leaves and Parmesan. Adjust salt, pepper and lemon juice to taste and serve.
Serving Suggestions
For a shortcut, find pre-shredded Brussel sprouts at Trader Joe's or other specialty grocery stores.
