     Oven Baked Jambalaya

Ingredients
3 Boneless, Skinless Chicken Breasts (cubed)
1 lb. Smoked Sausage - sliced
1 - 8 oz. Can Tomato Sauce
1 Can French Onion Soup
1 Can Beef Broth
1/2 cup Chopped Green Onions
3 Large Bay Leaves
2 Cups Parboiled Rice (uncooked)
1 stick Unsalted Butter
 
1/2 Bell Pepper - chopped
Black Pepper to Taste
Tony Chachere's or Tobasco (to Taste)
NO SALT (soup provides salt)

Instructions
Spray a lasagna pan w/non-stick cooking spray. Mix all ingredients (except butter)in the pan. Cut butter stick into pats and spread over mixture. Bake at 350 degrees, covered with foil, for 1 hours and 30 minutes (1-1/2 hours). Do not stir or uncover during the cooking process. Can be made ahead of time (covered and refrigerated) and baked at a later time. Recipe can be doubled.
Serving Suggestions
Serve with a side of fresh green vegetables.
