     Baked Country Omelet

Ingredients
5.5 oz box au gratin potatoes
3 c boiling water
1/2 lb bulk sausage
1/4 c chopped onion
1/4 c chopped green pepper
jar or can sliced mushrooms
1/2 c boiling water
1/2 c milk
6 eggs
 

Instructions
Heat oven to 350. Grease a 12X8 baking dish. In a large bowl, cover potato slices with 3 c boiling water. Let stand while preparing sausage. In a medium skillet, cook sausage and onion, drain. Drain potato slices, add to sausage mixture with green pepper and mushrooms until well combined. Spoon into prepared dish. In same large bowl, combine sauce and mix with 1/2 c boiling water. Blend well. Beat in milk and eggs. Pour evenly over sausage-potato mixture in dish. Bake at 350 for 35-40 minutes, or until knife inserted in center comes out clean. To serve, cut into squares.
