Peel cucumber and coarsely grate or finely chop it. Place cucumber in small holed colander or sieve and toss well with 1/2 tsp. kosher salt. Allow to drain over a bowl for 15 minutes. Press cucumbers using spatula to drain out as much liquid as possible.
In small mixing bowl, combine yogurt, drained grated cucumber, garlic powder, shallot salt, dried dill, 1T olive oil, pepper and fresh mint. Mix well to combine.
Drizzle with remaining 1T olive oil and garnish with additional fresh mint or dried dill if desired.

Suggestions
Serve as condiment on side of meat dishes, dolloped over quinoa, or with pita style bread as appetizer.
