2 lb chicken breasts, cooked and diced or shredded
1/3 cup diced onion
1 can Southwestern style corn
1 can white beans, drained and rinsed
5 cups chicken broth
1 cup barbecue sauce
1 tsp salt
1/2 tsp pepper
2-3 cloves garlic, finely chopped
Instructions
In slow cooker, add chicken, onion, garlic, corn and
white beans. In large bowl, mix broth, BBQ sauce,
salt and pepper. Pour into slow cooker. Cover; cook
on low for 4-6 hours.
Serve with shredded cheese.
Can also make with uncooked chicken. Follow cooking
instructions above. Cook on low for 6 hours. Remove
chicken and shred. Then place back in slow cooker and
cook 30 more minutes.
