1 (30 ounce) can refried beans
|

1/2 cup Corona beer
|
|
6 tablespoons tequila
|
|
3 tablespoons pureed canned chipotle chiles in adobo
|

2 cups shredded cheddar cheese
|

3 scallions, trimmed and thinly sliced
|

Instructions |
|
|
Combine beans, beer, tequila and chipotle puree in a medium
nonstick pot.
|
|
|
Cook partially covered over medium heat, stirring often for about
5-10 minutes.
|
|
|
Stir in 1 and a half cups of cheese and 3/4 of the onions.
|
|
|
Transfer to serving bowl. Top with remaining cheese and onions
and serve with tortilla chips.
