     My Anniversary Almond Cake

Ingredients
400g self-raising flour (I have used whole meal self-raising flour)
200g butter
100g ground almonds
200g sugar (I have used 150g sugar)
4 eggs
1 teaspoon almond essence
Add little milk to soften the mixture
To decorate-
Apricot jam or which you prefer
 
Flaked roasted almonds and some roasted whole almonds
180g Philadelphia soft cheese light
1 teaspoon vanilla essence
1/2 teaspoon almond essence
2-3 tablespoon icing sugar

Instructions
Beat butter and sugar till light and fluffy. Add eggs one at a time with a little self- raising flour till you finish it all. Add some milk, the ground almonds and almond essence to the mixture. If the mixture is a little bit thick add some more milk to soften it, not too much. Grease a baking tin and pour the cake mixture. Bake on 180c middle shelf for 1 hr 15 minutes. Test it with a small kebab stick. It has to be clean when you take it out. Leave it to cool. After brush the sides of the cake with jam and cover it with flaked almonds all around. Beat the soft cheese in a mixer with the icing sugar, vanilla essence and almond essence. Spread it on top of the cake and decorate with almonds. Enjoy --)
