Melt chocolate with water in double boiler. Remove from heat and beat till smooth. Beat 2 egg yolks firstly on heir own then into the chocolate mixture. Allow to cool. Whisk egg whites until stiff and fold into the mixture then refrigerate.
For the cake- Place yolks into a bowl and whisk till they start to thicken. Add sugar and continue to whisk until it thickens slightly. Mix in cocoa powder. In a clean bowl whisk egg whites to soft peaks. Fold into chocolate mixture then pour into tray.
