     Spinach and Lentil Tortellini Soup

Ingredients
1/2 cup Lentils, dry
2 cups Carrots, coarsely shredded
1 Onion, finely chopped
4 oz Ham (or Canadian bacon), chopped
2 cloves Garlic, minced
2 Tbs Fresh Basil
1 1/2 Tbs Fresh Thyme
1/4 Tsp Pepper
5 cups Chicken broth
 
1 cup Water
1 pkg (9oz) refrigerated Tortellini
4 cups Fresh Spinach

Instructions
Rinse lentils and drain, then place in crock pot. Add carrots, onion, ham, garlic, basil, thyme and pepper. Pour broth and water into pot. Cover and cook on low (simmer) for 6.5 to 7 hours. Or, cook on highfor 3.25 to 3.5 hours. Stir in tortellini and spinach until warm.
