In medium bowl, stir together flour and salt. Using a pastry blender or fork, cut in shortening until pieces are pea size.
Sprinkle 1 T. water over part of flour mixture; gently toss with fork. Push moistened pastry to side of bowl. Repeat, using 1 T. of water at a time until all is moistened. Form dough into a ball.
Slightly flatten pastry and place between 2 sheets of wax paper. Roll pastry into a 12 inch circle. Remove wax paper and wrap pastry around rolling pin to transfer to pie plate.
