     Christmas Log! (11 1/2 inch by 3 1/2 inch)

Ingredients
2 pkts morning coffee biscuits of 180g each, crushed.
180g Philadelphia light
1 shot whiskey
1 shot brandy
Some chopped figs
Some chopped walnuts
Mixed fruit about 3/4 cup
1 tblspoon orange candied peel
1 tblspoon candied mandarin peel (optional)
 
10-12 tblspoon peach syrup (I have used peach syrup that I had from a can of peaches)
1/2 Dark chocolate (used Icam)
1/2 milk chocolate
4-5 tblspoon icing sugar
1 teaspoon vanilla

Instructions
Whisk Philadelphia cheese, add icing sugar and vanilla. Leave aside. In a medium bowl put the crushed biscuits, sprinkle the whiskey and brandy on biscuits. Add the mixed fruit, candied orange and mandarin peel, chopped walnuts, chopped figs and the peach syrup. When you add the syrup see how much moist do you want it. Depends how much syrup you want to add. Put the Philadelphia cream mixture to the bowl. The mixture will be a little sticky. Try to form a log and place it on a tray, covered with wax paper. Put it in fridge to get firm. Leave it over night. To cover with chocolate, melt the dark chocolate and the milk chocolate together, Bain-Marie. Cover the log with chocolate, dust log with icing sugar and put some Christmas decoration. When the chocolate is ready and dry, take off the wax paper. This log you have to leave it in fridge, it's very soft and moist from inside but it's delicious! --)
