Saute mushrooms, onions, salt, and pepper in a
skillet. After onions are golden, add garlic.
After garlic is golden, add a splash of sherry
or vinegar and cook until liquid almost
evaporates. Move this mixture to a plate.
After wiping the bottom, use the same skillet
for the quesadillas. First, place a tortilla in
the skillet. Add chicken, mushroom mixture,
gruyere, and arugula. Cook on both sides until
cheese is melted.
