     Southwestern Stuffed Peppers

Ingredients
1 cup quinoa
6 scallions, thinly sliced
1 lb ground turkey
1 cup canned corn
1 cup canned black beans
cumin
chile powder
cayenne pepper
1/2 onion, diced
 
4 red bell peppers
salsa
Monterey Jack cheese

Instructions
Preheat oven to 375. Cook quinoa normally. In a large skillet, saute onions, scallions, corn, and beans, seasoning with cumin, chile powder, and cayenne pepper. Add ground turkey until halfway done. Add quinoa and mix everything together. Half and de-seed the bell peppers. Scoop the mixture into the peppers and cook on a foil-lined baking sheet for about 30 minutes or until turkey is fully cooked and peppers are soft. Add cheese on top and cook until melted. Serve with salsa.
