Preheat oven to 375. Cook quinoa normally. In a
large skillet, saute onions, scallions, corn,
and beans, seasoning with cumin, chile powder,
and cayenne pepper. Add ground turkey until
halfway done. Add quinoa and mix everything
together. Half and de-seed the bell peppers.
Scoop the mixture into the peppers and cook on
a foil-lined baking sheet for about 30 minutes
or until turkey is fully cooked and peppers are
soft. Add cheese on top and cook until melted.
Serve with salsa.
