The two most important things for making sushi
are finding high quality sashimi grade fish and
using the right sushi rice recipe. Here is the
best recipe for making rice.
Wash rice in a strainer, extensively, until
water runs clear. Combine rice and water in a
large covered pot and bring water to a boil.
Once boiling, reduce heat to low and cook for
20 minutes. While rice is cooking, dissolve
salt and sugar in vinegar, heating in microwave
to help solvate. When most of the water has
evaporated from rice, turn off heat completely
and let steam for 10 more minutes before
removing lid.
Transfer rice to a wooden (the wood helps
absorb extra moisture) bowl and pour vinegar
mixture over rice. Gently break up rice with
wooden spoon, trying not to mash rice together.
Cover bowl with towel and place in refrigerator
for 5 minutes or until it reaches room
temperature. Prepare whatever sushi you like,
using a bamboo mat.
