     Chili Relleno Casserole

Ingredients
2 (7 oz) cans whole green chilis (diced and drained)
1 lb sharp cheddar cheese (grated)
1 lb monterey jack cheese (grated)
4 eggs
salt and pepper to taste
2 tbl flour
1 large can evaporated milk
1 (15 oz) can herb tomato sauce
 

Instructions
Grease bottom of 9X12 casserole dish. Cover dish bottom with 1/2 the chilis. Spread grated cheddar over chilis. Cover with the remaining chilis. Spread grated Monterey jack over chilis. In another bowl separate the eggs. Beat whites until stiff. Beat yolks and add flour, milk, salt and pepper. Fold whites into the yolk mixture and pour over casserole. Bake 45 minutes (or until lightly browned) @ 325, uncovered. Pour tomato sauce and return to oven for 15 minutes.
