3 skinless, boneless chicken breasts, cut into 1/2 inch cubes
1/4 tsp salt
1/4 tsp freshly ground black pepper
1/2 c. mayonnaise
Instructions
Combine olive oil, lemon and orange juices, lemon and orange zest, rose-mary, thyme and sage in a small bowl. Place two-thirds of this mixture in resealable plastic bag, add chicken and marinate 1 hour. Discard used marinade.
Heat broiler. Skewer chicken evenly onto six 8-inch (20 cm) skewers. Season with salt and pepper. Cook 4 inches (10 cm) from broiler until just cooked through, about 10 minutes, turning once.
Mix mayonnaise with reserved marinade. Serve chicken skewers with citrus-herb mayonnaise.
