Using a mixer with a whisk attachment on the low setting, combine
softened butter and powdered sugar in a large bowl until
thoroughly combined. Increase mixer speed to medium and whip
up for a couple of minutes.
Combine pink lemonade mix with half & half cream and vanilla to
dissolve the crystals in the drink mix – you may need to add a tiny
bit more cream. (Skipping this step can give you a frosting that is a
bit “grainy” because of the crystals – lesson learned the hard way!)
Add lemonade, half & half and vanilla mix to the powdered sugar
and butter and beat for another minute or so.
You can set this in the fridge to set up for a few minutes for a
slightly “stiffer” consistency. We couldn’t wait to eat ours so we
skipped that step – hence the soft-style frosting in the photos – it
was still tasty!
Scoop frosting into a plastic bag and fit it with a decorating tip for
pretty piping!
