6-8 zucchini, depending on size, sliced lengthwise thinly
Onion, chopped
1 lb Italian sausage
1 jar spaghetti sauce
Instructions
Cook onion and sausage until done. Add spaghetti sauce and
mix. In a bowl combine ricotta cheese, mozzarella cheese,
egg, pepper, and Italian seasoning.
Put small amount of sauce on bottom of pan. Put a single layer
of zucchini down. Top with 1/2 cheese mixture, then layer of
sauce. Put second layer of zucchini, then rest of cheese
mixture, then the rest of the sauce. Cover with foil and bake at
350 for 30 minutes. Remove foil and bake additional 15
minutes.
