      Cream Filling for Pie or Cake

Servings   1 pie

1/2 cup sugar
3 T cornstarch
3 T flour
1/2 teasp. salt
2 cups whole milk
1 egg slightly beaten
1 teasp. vanilla extract
1/4 teasp. almond extract optional
1/2 cup heavy cream

Combine first five ingredients in saucepan. Cook on med/high until thickened. Scoop a small amount of filling into egg. Mix and stir back into filling. Stir and cook until just bubbly. Reduce heat and cook two more minutes. Do Not Boil. Remove from heat. Stir in extracts. Set aside and let cool.
Whip cream until fluffy. Fold whipped cream into cooled filling. Pour into cooled crust. See Recipe for Cinnamon Grahm Cracker Crust.
Can be used for Coconut Cream Pie or Strawberry Cream Pie or Banana Cream Pie. Also use for Cream Filling for cake.
